This sea bass ceviche is the greatest I’ve ever had—it’s a luscious, freshness overload. The flavors are vibrant, slightly sweet, spicy, and slightly salty. The textures are perfectly matched, with the avocado being creamy and the fish being delicate and crispy. Mango brings a lovely blast of sweetness.

In a bowl, mix sea bass, red bell pepper, red onion, jalapenos, tomato, cucumber, mango, and lime juice. After giving it a good toss to coat, chill for 12 minutes, stirring every 4 minutes. Add oil, cilantro, and salt; stir until thoroughly combined. Gently incorporate the avocado and serve right away with tostadas or tortilla chips. |
