Directions
Rolled tacos, also known as flautas, are a delicious dish, especially these chicken flautas that my spouse loved and that I was able to make.

In a pan over medium heat, melt butter and whisk in flour until smooth. Add the onion and simmer, stirring, for 5 to 10 minutes, or until the onion is tender. Mix the black olives, lemon juice, paprika, black pepper, and salt. Cook and stir for a full two minutes. |

After adding the chicken, turn off the heat and cover the skillet. |

In a deep fryer or big, heavy saucepan, heat the oil over medium-high heat. |

Tacos should be filled with chicken mixture. Using a toothpick, seal the tortilla as you roll it around the filling. |

Fry rolled tortillas in heated oil in batches for approximately two minutes, or until browned. Transfer tortillas to a platter lined with paper towels using a slotted spoon or tongs, and serve warm. |
