Aebleskiver

Danish desserts called aebleskiver are similar to doughnut holes but more better and sweeter. It's made in a cast-iron pan that looks like an egg poacher and is customarily served with glogg during Advent. Serve hot with powdered sugar, jam, or syrup.

Using an electric mixer set to high speed, beat egg whites in a clean glass or metal bowl until stiff peaks form. Put aside.

In a big bowl, combine buttermilk, flour, egg yolks, melted butter, sugar, baking soda, baking powder, and salt; beat until well combined. Fold in egg whites gently.

Aebleskiver pans should be heated to medium heat. Fill each cup with about 1 tablespoon of vegetable oil.

Fill each prepared cup with approximately two tablespoons of batter. Turn them as soon as bubbles start to form around the edges. (While a fork will do, Danish cooks prefer to use a long knitting needle.) Cook the ball for a little while longer, rotating it to prevent scorching.
