Directions
Taquitos made in the air fryer are a quick and simple supper option. You can use home-cooked chicken, but using shredded rotisserie chicken saves time. Serve with your preferred sides, such as guacamole, sour cream, and Mexican tomato sauce. |

In a skillet over medium heat, heat the oil. Add onion and simmer for 3 to 5 minutes or until tender and transparent. Add the garlic and simmer for one minute or until fragrant. Stir together the Mexican tomato sauce and the green chillies. Add the Neufchâtel cheese, Mexican cheese blend, and the shredded chicken. For about three minutes, cook and stir the mixture until the cheeses have melted and it has warmed through. Add pepper and salt for seasoning. |

To make tortillas soft and malleable, heat them in a pan or straight on the gas stove grates. Put a third of the chicken mixture in the middle of each tortilla. Roll up and fold over to form tacos. |
