Set an air fryer to 400 degrees Fahrenheit, or 200 degrees Celsius. |

Arrange the veal on a sanitized surface and season with salt, pepper, and lemon juice. |

Put flour into a level platter. In another bowl, beat together the egg and parsley. Transfer the bread crumbs to a third plate. Dredge each veal cutlet first in flour, then in egg-parsley mixture, followed by bread crumbs, pressing down so that bread crumbs stick. |

Coat the air fryer's basket with nonstick frying spray. Make cautious not to overcrowd the basket when you place the breaded veal cutlets inside. Apply nonstick cooking spray to the tops. |

Simmer for five minutes. After flipping, cook for a further five minutes, sprinkling nonstick cooking spray on any chalky areas. Continue with the leftover veal. Accompany with wedges of lemon. |
