Cuban-Style Yuca

A root vegetable from Latin America is called yuca, or cassava. This is how my grandmother used to make this simple dish.

Put the yuca in a pan and add water to cover it. Add salt and stir. Over medium-high heat, bring to a boil, cover, and cook until tender, about 15 minutes. After draining, put the yuca on a platter.

In the meantime, fill a pan with olive oil, onion, garlic, and lemon juice. Cook for approximately five minutes on medium heat.

Pour the hot olive oil mixture over the yuca; serve immediately.
