Preheat oven to 375 degrees F (190 degrees C.)

Mix the flour and salt together in a big bowl. Until the mixture resembles coarse crumbs, cut in shortening. Add enough milk to the beaten egg yolk in the measuring cup to make up to 2/3 cup of liquid. Mix the flour mixture until all of the flour is moistened. Split the dough in half. Roll out half of the dough onto a floured surface, then fit it into a 9 by 13-inch pan.

Apples, brown sugar, white sugar, cinnamon, and nutmeg should all be combined in a big basin. Transfer the apple mixture to a pan. Place the remaining dough, rolled out, over the apples. Make slits in the top dough and seal the edges. After beating the egg white until foamy, brush the crust.
