1 tablespoon Olive oil
1 1/2 cups chopped onion
1/2 cup Bunch Green Onions
1 Clove Garlic
1(12 ounce)) dry black beans
2 smoked ham hocks
8 ounces diced ham
1/2 bacon
2 bay leaves
1/8 teaspoon Ground coriander
to taste Salt
to taste Brazilian pepper
1/2 cup Fresh cilantro
1/4 cup Fresh parsley

Feijoada- Brazilian Black Bean Stew

My take on the classic Brazilian black bean stew, feijoada, preserves the deep, smokey aromas that are so well-known in Brazil. You can add more meats, like sausage, if you'd like. This tastes great with brown rice.

In a big pot or Dutch oven, heat the oil. Add the chopped garlic, green onions, and 3/4 cup of onion; simmer and stir for 4 minutes, or until the onion softens. After the beans have soaked, add enough water to cover them by three inches. After bringing to a boil, lower heat to medium-low and simmer, covered, for two hours, or until vegetables are soft.

While the beans are boiling, put the chopped 1/4 cup onion and the ham hocks in a separate pot. Once the meat easily peels away from the bone, cover with water and simmer for approximately one hour. After draining, add to the beans.

Meanwhile, heat the oven to 190 degrees Celsius, or 375 degrees Fahrenheit.

Put the leftover onion, bacon, and ham in a baking dish. Bake for 15 minutes, or until mixture is crispy.

Add the drained bacon and ham mixture to the beans. Add pepper, salt, coriander, and bay leaves for seasoning. Cook, covered, for an additional half-hour.

Just before serving, add the parsley and cilantro, chopped.
