Directions
This is a fresh salsa made with habanero peppers instead of regular salsa. This salsa is not to be taken lightly.

After roasting jalapenos on a grill or gas stove, they should be completely blackened. Transfer to a dish or plastic bag and cover with plastic wrap; steam until the skins peel off. When the stem, seeds, and peel have cooled, remove them. |

In the bowl of a blender, combine or process the jalapenos, onions, garlic, sugar, salt, and pepper. Pulse to chop and mix, then move to a big bowl and mix in a can of green chilies, lime juice, and cilantro. Pulse the tomatoes to the right size in batches, then add them to the green chili mixture. |

Return the habanero and one cup of chopped tomatoes to the blender, and process until smooth. Transfer the purée to the tomatoes after straining it to remove any large habanero pieces. Combine all the flavors, stir well, cover, and chill for at least one hour to allow flavors to mingle. |
