In a small bowl, combine raisins and rum; soak for 30 minutes, then drain. |

In a medium-sized basin, beat together eggs, milk, white sugar, vanilla, and salt; gradually whisk in flour to form a homogeneous batter. Add drained raisins and stir. |

In a large skillet placed over medium heat, melt 2 tablespoons butter. Pour batter into skillet; cook for 5 to 6 minutes, or until pancake is set and bottom is golden brown. Pancake should be cooked for a further three minutes or until golden brown on the other side. |

Using a spatula or two forks, tear the pancake into bite-sized pieces. Drizzle with melted butter and dust with powdered sugar. Turn the heat up to medium-high and gently toss the pancake pieces for about five minutes, or until the sugar has caramelized. Garnish with extra powdered sugar and present alongside plum preserves or apple sauce. |
