Kaiserschmarrn

Austrian pancake treat Kaiserschmarrn is made with raisins soaked in rum. While cooking, the pancake shreds into pieces, is dusted with powdered sugar, and is served hot with plum preserves or apple sauce on the side.

In a small bowl, combine raisins and rum; soak for 30 minutes, then drain.

In a medium-sized basin, beat together eggs, milk, white sugar, vanilla, and salt; gradually whisk in flour to form a homogeneous batter. Add drained raisins and stir.

In a large skillet placed over medium heat, melt 2 tablespoons butter. Pour batter into skillet; cook for 5 to 6 minutes, or until pancake is set and bottom is golden brown. Pancake should be cooked for a further three minutes or until golden brown on the other side.

Using a spatula or two forks, tear the pancake into bite-sized pieces. Drizzle with melted butter and dust with powdered sugar. Turn the heat up to medium-high and gently toss the pancake pieces for about five minutes, or until the sugar has caramelized. Garnish with extra powdered sugar and present alongside plum preserves or apple sauce.
