10 springs Fresh parsley

After putting the spareribs in a big saucepan, cover them with just enough water. Stir in the bay leaves, garlic, lime juice, rosemary, oregano, and 3/4 of the parsley. Bring to a boil, then lower heat and simmer, uncovered, for about 25 minutes, or until water is fully evaporated. |

After removing the bay leaves, simmer the spareribs for a further few minutes, turning them over once. Toss the softened garlic and browned bits from the bottom of the saucepan with the spareribs using a spatula; the garlic will seep into the pork. Move the spareribs to a plate covered with paper towels so they can drain. |

Black pepper is used to season spareribs. To serve, garnish with the remaining parsley and lime wedges. |
